Hughes partnered with Red Rock Brewing to construct four facilities across Salt Lake and Summit Counties, helping the company expand its production, retail, and restaurant presence throughout northern Utah. The portfolio includes the downtown Salt Lake City restaurant, the production brewery and beer store, and restaurant locations at Fashion Place Mall in Murray and Park City Junction.
The production brewery at 443 North 400 West serves as the heart of Red Rock’s packaged-beer operations and includes an on-site store offering fresh products directly to customers. Downtown, Hughes transformed a former dairy warehouse at 254 South 200 West into a distinctive restaurant and brewpub, preserving the character of the existing structure while incorporating brewing and hospitality spaces.
Additional restaurants at Fashion Place Mall and Park City Junction extended the Red Rock experience into two prominent retail destinations. Together, the four projects demonstrate Hughes’ ability to deliver varied food-and-beverage environments—from production and retail to adaptive reuse and full-service restaurants—while maintaining a consistent identity across multiple locations.
